Liberian jollof rice  recipes and preparation

  rice is one of the most consumed food around the world today; liberia, ghana and nigeria which is surely among them

  rice contains calcium, iron,vitamin e.t.c which is known to be good for the body

  being among what one can prepare easily in a very short period of time,there are other alternatives to white rice out there which are: brown rice,barley and so on

 not going into that now anyway even at a tender age I was able to start cooking rice and other foods which can be done with in less that an hour
though at that time i do forget i have something cooking right in the kitchen which do result to to food getting burnt but that is not anymore since I have improve that that time

things needed:

  • 2 cups of long grain rice
  •   1 c. green beans
  • 1 owl fresh tomato
  •  1/2 tsp thyme
  •  1/2 tsp black pepper
  •  1 t salt
  •  2 chopped carrots
  •  1 16 oz can tomatoes,diced
  •  1 6-oz can tomatoe paste
  • 1/2 c. onion, finely chopped4
  • 4 c. water or stock  
  • 1/2 c. vegetable oil1 
  • 2 c. shredded cabbage
  • 1/2 c. red or green pepper

 let's start cooking make your pots and pans ready along with aluminum foil which you would use in cover the rice when you are almost done

 take your meat or fish and make sure it is being chopped into smaller pieces to give a fine look cut your tomatoes into smaller pieces by either slicing it in a round shape or cutting into smaller shape (which ever you like)
put you pan on the heat and put some oil

  fry your finely chopped onions, carrots,pepper tomatoes in the hot oil and set it aside
cook up your long grain rice for about 20 minutes, remove from the heat and drain out the water then set it aside
make sure your rice is not too cooked (half done)

 add your already mixed ingredients which you had prepare earlier with it and stir add your seasoning and let it cook for about 10 minutes

 now add your recently drain rice and mix all together
transfer the mixture into a large aluminum baking pan,cover and seal with aluminum foil

 with this we are trying to make it look Brownish

 and place in oven set timer to 30 minutes

 after thirty minutes remove from oven and remove the aluminum foil and add more sauce then stir and replace the aluminum foil and put back into the oven for about 10 minutes

 always remove to check if it is soft enough
once it is soft to you want you can remove it from the heat and serve in a dish and enjoy with a yogurt

 nigeria jollof rice is not cooked/prepared that way but still get prepared and delicious after being cooked

 while away at school i do cook mine the easier way though I am not good by then (even not still that good)

quickly see how it is being prepared in nigeria

  • 2 cup of white rice
  •  big onion (sliced or chopped)
  • numbers of fresh peppers
  • numbers of fresh tomatoes
  • 2 cub of seasoning
  • 2 tea spoon of salt
  • 1 can of tomato meat/fish chopped into piecesv
  • vegetable or red oil (which ever you prefer, it is much more better to use vegetable oil)

 put a pot on the heated frame ( maybe a stove,gas or whatever)
you can prepare your ingredients like you would do when making a pepper soup and you can cook it up in water ( both methods are ok)

cooking up van be done this way..

 put about 2 to 3 cup of water in the pot and heat it up; put your sliced tomatoes, onion. smashed fish and other ingredients into the pot along with your seasoning and stir then allow to boil for about five ( 5 ) minutes

that is being done in other to let boil and mix up

 wash your white rice and put it into the pot currently boiling along with the ingredients and place the pot's cover lid over it and wait for about 20 minutes

 check to see if it is soft enough for consumption; if not soft enough add small water and close back the lid

 check back one minute after another to prevent the rice getting burnt

 open the lid and stir the rice , and drop down from the heat; with this you have successfully cooked a nigerian jollof rice

  other countries may prepare theirs just as it has being in nigeria but that is the best way to make or cook your rice
